Crock Pot Vegetable Soup With Chicken

I’m always looking for more recipes to make in my crock pot besides the usual stuff I make. The one thing that’s always better to make in a crock pot rather than on the stove is soup. You can prep everything early, throw it in, and let it cook all day without doing a thing. This specific recipe I tried for the first time yesterday and it was phenomenal! I always like to have lots of protein with my dinners, but with that I like to have a ton of veggies so this recipe was perfect. I used all fresh vegetables for mine and you can also add corn or whatever else you prefer. You can add more vegetables if you like more, you can add less if you like less. You can just do vegetables and leave out the chicken. Modify it however you like!

Ingredients:

  • 1tbps Butter
  • 1/2 Cup Onion
  • 2 Carrots
  • 2 Stalks of Celery
  • 1 Large Potato
  • 1/2 Cup Green Beans
  • 2tsp Minced Garlic
  • 3 Cups of Chicken
  • Salt & Pepper to Taste
  • 15 Ounce Can Diced Tomatoes
  • 8 Ounce Can Tomato Sauce
  • 1tsp Italian Seasoning
  • 6 Cups Chicken Broth

Instructions:

  • Cut up all vegetables and toss in the crock pot.
  • Trim fat off chicken. Add chicken to crock pot.
  • Put in all other ingredients.
  • Cook for 6-8 hours on low.

You really can’t overcook this recipe. In fact, the longer you cook it, the better! I just found that it was best to wait at least 6-8 hours before enjoying. There is also not many instructions because everything is always pretty straightforward for crock pot recipes. I just tried stirring it every hour or so.     Tempts me to pull from the back closet shelf my own slow cooker/crockpot. Last used it over a year ago to make ropa vieja. Now you’ve bestirred me!
